Process notes

  • Start mash at 45 C for ferulic acid to encourage phenol production by yeast
  • Finish mashing for dryness; rests at 62 C and 68 C

  • Cane added at end of boil

  • Final gravity ~2.3 P

tasting notes

A symphony of malt, yeast and hop flavors all in equal measure. Pear, white pepper & clove fermentation notes w/ floral and orange marmalade hop flavor atop toasty honey-like malt; dry, low bitterness, complex and lively.
