- Mash for dryness; rests at 62 C and 68 C
- RO water plus 50:50 CaCl & CaSO4 in mash, NaCl & MgSO4 in kettle
- Pitch temp 62-64 F, keep below 69 F for 48 hours, then let free rise
- Final gravity ~3 P
Tasting Notes
Malt is clean and clear with overtones of hot-milk cake and candied sugar. Grapefruit zest and candied peel are bright with undertones of blackberry and pine. Medium-high bitterness checks richness of malt. Dry finish, with graham cracker, grapefruit and dank notes lingering along with a crisp bitterness and some warmth.
